On December 11, 2019, opened the store, Shonan Shirasu and Kaisendon, “Uokama” on Komachi-dori, Kamakura.
The whitebait we offer is locally unloaded here in Shonan area and can be tasted the freshness on the same day of landing. (However, we might purchase whitebait from other area during the season in which fishing is not allowed and in case of a poor haul due to bad weather.) We hope everyone enjoy the taste of raw seafoods including whitebait.
■What Shirasu is.
Shirasu is young anchovy and called whitebait in English.
It is called Kamaage-shirasu in Japanese which is freshly caught whitbait quickly boiled with salt.
Raw whitebait should be consumed on the day of landing because whitebait freshness cannnot be kept in refrigerator.
Freshness matters for both raw and boiled whitebait.
